Zanotto's Downtown Market Pasta Salad
INGREDIENTS:
12-16 ounces short curly pasta |
1 Red Onion |
1-2 baskets Cherry Tomatoes |
3/4 pound of feta (tomato basil feta works great) |
1/2 cup shredded parmesan |
1 lemon |
1/2 cup olive oil |
garlic powder and salt to taste
DIRECTIONS:
Cook pasta al dente. Pour olive oil over cool, rinsed pasta.
Squeeze 1/2 a lemon over pasta and let sit while onion and
tomatoes are cut into small quarters. Add to pasta then sprinkle
in garlic powder and salt. Crumble feta well and add to pasta
with the shredded parmesan. Toss well to spread the feta .
Taste and correct seasoning as required.
